For example, the Mar y Tierra dish. Sweet shrimp, savory short rib but the sauce for the pasta had a very sweet corn sauce. Needed more acid and heat to balance the sweet. Had alcoholic and nonalcoholic (nonalcoholic wine) choices. As someone who quit drinking this was refreshing.
