Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    This was one of the best dinners that anyone in our group could remember! The food and service were five star, while the ambience was completely relaxed. Our server Shawna was attentive throughout the meal, making recommendations and answering questions, but never hovered. She kept the pace of the meal unhurried , but we never felt like we were waiting. The food was incredible; the layers of nuanced flavors in every bite were a joy to experience and share. At the same time, it felt like comfort food! The cocktails were equally delicious! All in all, I can’t recommend Sazón highly enough - it was a meal that we will never forget!

    A very memorable dining experience. We shared an appetizer and a soup, and each got our own entree. The pairing of the entree with their mole was delicious and a perfect pairing.

    Our third time to Sazon. This time to celebrate a birthday. Overall, disappointed compared to our first two visits. Last one was about a year ago. Biggest issue was our server. In the past, they have all been very relaxing, friendly and informative. Last night, our server was OK, but not like previous experiences. Not as friendly or as informative. Sometimes seemed a little pushy. Did not like that they provided only one drinks menu for the four of us. By the time we had each had a chance to look at it, she had come to the table two times to get drink orders. And seemed to push and recommend toward the most expensive items. They also went through a choreographed timing to clear the table with another server. Seemed very hoaky. Also the table was wobbly and they firmed it up with wedges but where one end was noticeably higher than the other end. Not what I would expect from a place like this. Food was overall very good. However, one of the entrees (stuffed eggplant) was pretty bland. Overall, not like it used to be. We will be moving on to other great restaurants in Santa Fe next visit.

    We’ve been to Sazon many times and it is always wonderful! They start with warm corn tortillas and a sampling of a variety of mole sauces. This helps you decide which mole might best fit your tastes when paired with your selected protein (they have other wonderful dishes as well), The squash blossoms and pulpo are always great starters. If you like to try huitlacoche, this is one of the best places to get it. The sopa de amor is fantastic and a wonder blend of flavors. After your entree (we love the green mole with the fish selection, but they are all great). If you still have room for dessert (you better save room), get the dulce sinfonia! Your server will talk you through the series of flavors you will experience. We’ve not found a dessert like it in the world. Service is attentive and not intrusive. The all around quality is consistent and world-class. If you can, introduce yourself to Chef Olea when he comes around. He always listens to your feedback.

    The food was amazing as was the service. Our water glasses were always full and our sever was able to serve us like a tasting meal so we weren’t rushed

    Another outstanding meal and experience at Sazon. The food could not get any better and the service impeccable! This is without a doubt the best or one of the best restaurants in Santa Fe As usual Chef Ferando came to our table to greet us and chat. This is a special and personalized dinner experience.
