Located in the heart of the old railroad and mining town of Minturn, the Saloon’s building dates back to 1901. During the last one hundred years it has been, at one time or another, home to various taverns, restaurants and even back room gambling for railroaders. While the last five decades have seen the development of Vail and Beaver Creek resorts just seven miles on either side of Minturn, the town’s appearance and feel retains its historic Colorado roots. Recently under new ownership, The Saloon has undergone a complete renovation and reopened in November of '23 with a fresh new menu and updated space. Chef Anthony Mazza's menu features slow-cooked short rib and pork cheek and Colorado River Ranch wagyu steak. The nostalgia and historical memorabilia and photos remain. The space still feels like The Saloon, but carried into the present day. Enjoy a resurrected Colorado Saloon and feel the history all around you.

Good ambience and food. Lacks many vegetarian options which is atypical of a Mexican restaurant. Salsa was okay. The wagyu hot dog amazing. Thanks for being open on Christmas eve.

There’s a reason we’re perched down by the river. In fact, the view right outside is a nice little reminder that life is better when you go with the flow. The only thing that might make it better are some ice cold drinks, Texas-style smoky ‘cue and the company of your favorite fellow humans. So come in, take a seat, order up somethin’ good, crack open a cold one and let the good times flow like the Yampa.

Salt & Lime is Rex's Family of Restaurant's twist on classic Mexican. A bright, vibrant atmosphere and fresh flavors are our priorities. With an emphasis on tacos, traditional cooking techniques and regional ingredients are used to create progressive Mexican dishes. At the bar unique craft tequila cocktails are prepared with natural ingredients and fresh juices. Take advantage of the salt, lime & sunshine offered up on the rooftop deck during the summer months. Due to ever changing mountain weather, our patio is seated on a first come first serve basis and not available for reservations or booking in advance.

Very friendly waitress who was quite helpful with the menu and suggestions. Very responsive to our questions. We ordered many different taco options and all were delicious. Excellent presentation too!

We’ve been coming to Brunelleschi’s since they opened and our son was a baby! The owners had the great and wonderful idea to open a family friendly Italian restaurant in Aspen! Little tough finding spots suitable for young kiddos and they made the dream real! Ha! The best food and ambience you’ll find in town. Kids can make their own pizzas! Such a great place for everyone!
