Our dining experience at Tzuco was extraordinary! The culinary creativity and bold flavors in every dish left us impressed. We started with the Mayan Ceviche, which was a refreshing masterpiece. The delicate hamachi paired beautifully with the tropical sweetness of pitaya and mango, while the habanero gelée added just the right amount of heat. The sour orange and achiote aguachile brought a tangy brightness that tied everything together, and the crispy fried plantain offered a perfect textural contrast.
Next, the Pulpo Enamorado was a delight for the senses. The guajillo-roasted octopus was tender and rich, complemented by the smoky depth of the salsa macha. The pickled carrots and peas provided a tangy and slightly sweet counterpoint, while the creamy tonnato aioli and tender potatoes rounded out the dish harmoniously.
For our mains, the Pumpkin Risotto was a highlight. The creamy risotto had a luscious texture, enhanced by the sweetness of roasted delicata squash and the savory richness of braised short ribs. The pickled shallots added a lovely acidic pop, perfectly balancing the dish.
Finally, the Braised Short Ribs were an indulgent treat. The meat was fork-tender and infused with deep, earthy flavors from the Guajillo and Ancho chiles. The charred avocado and Brussels sprouts added a smoky complexity, while the tomato and onion offered a light freshness that kept the dish from feeling too heavy.
Each plate at Tzuco felt like a thoughtful blend of textures, flavors, and vibrant ingredients, reflecting the rich culinary traditions of Mexico. We will certainly return and highly recommend it to anyone looking for an unforgettable dining experience!
