My wife and I had the pleasure of meeting Chef Lee, who was incredibly kind and took the time to personally greet everyone. The staff were just as welcoming, demonstrating excellent communication and attentiveness. The atmosphere struck a perfect balance between modern elegance and cozy warmth. The course meal exceeded all expectations—each dish was thoughtfully designed with exceptional taste, creativity, and a seamless flow of service. The alcohol pairing was also expertly curated, enhancing the overall experience. What stood out most was Chef Lee’s dedication to sustainability in his restaurant. I recommend visiting the website prior to your visit to understand his intent with the non-profit org. His vision is truly inspiring, and I deeply respect his ambition. Highly recommended to everyone. - Isaac

I don’t usually post reviews, but I feel like I have to with this one because of how amazing everything was, from walking through the door, to the whole food experience. It is not just a regular eating at a fine dining restaurant. It’s an amazing experience With the chefs and the entire Shia team. I will definitely come back and can’t wait to try their other food menu!

Truly one of the best dining experiences I've had! Every course was phenomenal, the food was creative, delicious, and a mix of familiar Korean flavors elevated and made into what felt like a true Korean American meal. Highly recommend the beverage pairing too - it really does bring everything together. Service was amazing too! And the presentation - all the dishes were beautifully displayed, they did a great job with the interior and lighting, and so impressed at what they are doing to reduce waste.

Hands down one of the best tasting menu experiences! Everything from the communication leading up to our reservation day, to the dinner service, and to the moment we ended the evening and walked out the door, can not express how exceptional it all was. Just want to recognize that each staff member we had an interaction with made us feel welcomed. Yes, reservations are hard to get but not impossible. Don’t be disappointed if Edward Lee isn’t there, the food is what you should be going for and trust, it will not disappoint.

Since the announcement that Chef Edward Lee was opening a new restaurant in DC, I’ve been eagerly waiting to give it a try. However, getting reservations here was extremely challenging but thankfully, I managed to get reservations in the lounge for the 5 course meal for $90 pp. To describe the actual dining experience, first off the main door can be easy to miss in the dark (it is right next to Blue Bottle). When we entered, we were seated at the bar where we were welcomed by a welcome cocktail/mocktail. The menu was displayed and they brought out each item with appropriate utensils at a very well timed pace. The five course menu included: 1. Hotteok with galbi and eel - interesting flavor/texture combo (4/5) 2. Pine nut, soondubu and apple juk with crab- also interesting flavor, not to my personal liking bc I don’t enjoy seafood but my bf said it was pretty good (4/5) 3. Pork belly, abalone, clam jook- the pork belly was so soft and tender and the dish overall was very tasty (4.5/5) 4. Short rib (vs other option is rockfish which we did not order )- the short rib was cooked well and went well with the grilled pear and pickled beets however nothing mind-blowing (4/5) 5. Jujube cocount icecream with pine nut brittle and yuja- sweet and refreshing but nothing too special (4/5) In terms of ambience- a bit dim for my liking and the bathroom door is easy to miss. The best part was Chef Lee’s presence- we were not expecting to see him but he was there on a Friday evening, walking around to meet the guests. He was very sweet and down to earth, took photos with each group of guests. Even though we were seated in the bar, Chef Lee said we were welcome to tour the kitchen but when we entered the main dining room where the kitchen was, the employees were confused and thought we were lost so that was a bit awkward. Final words- I think it is worth the experience (if you’re able to get reservations). Thank you Chef Lee and Shia team for a tasty meal and friendly service:)

We had reservations for four for bar seating and it was a very pleasant experience. The drinks were delicious and had a twist of Asian flare. The pine nuts in some of the drinks were so delicious it really brought out the flavor of the drinks and the wrapped the combination of the flavors very well. The tuna tartare with the seaweed chips were yummy and the oysters were fresh and delicious. I would definitely come again to relax and catch up with friends and enjoy the ambiance. Although the bar seating was small, it felt very cozy and felt more attended to. I definitely want to come back for their dinner course meal.

My friend and I enjoyed every dish on the menu! I chose the recommended pairings for drinks. It was also wonderful to see Chef Edward Lee himself! Such a warm and kind person and genuine like the food he crafts. As I familiarize myself with Korean cuisine, I could appreciate the intricate details, flavours, and love put into each dish.
