Restaurant Olivia is a pasta-focused restaurant located in Denver’s Wash Park neighborhood. Olivia is the second project from chef Ty Leon, beverage guru Austin Carson, and hospitality maven Heather Morrison.

Each evening we open the doors to our restaurant as if it were our home, welcoming guests with warmth and graciousness. We believe you’ll feel our attention to hospitality the minute you step inside.

We draw inspiration from classic Italian dishes and the traditions that bring them to life, but we also feature flavors and recipes from around the world. Our food is made with care and intention. We source our ingredients from organic and local producers whenever possible. Our beverage program features expertly-crafted but playful cocktails, alongside an Italian-focused wine list.

Punset wines have been a cornerstone of our list from the very beginning—and for good reason. Marina Marcarino is a true pioneer in the world of wine. In the early 1980s, she made history in Barbaresco as one of Italy’s first female winemakers and the first to fully embrace organic viticulture—a practice that remains rare in the Langhe even today. Her wines are nothing short of extraordinary, filled with life and texture that set them apart in the world of Nebbiolo. Among the giants of the region, she quietly crafts some of the most vibrant, personality-driven wines in Barbaresco. During this special dinner, we’ll explore multiple vintages of her acclaimed Barbaresco, including the 2014 and 2016 Basarin Riserva, as well as the 2014 and 2015 Campo Quadro Riserva from magnum. The evening will also feature classic varietals such as Barbera and Arneis. As Marina leads the conversation around our community table, Chef Ty and his culinary team will present a beautifully curated five-course, Piedmont-inspired menu. Expect an evening of engaging discussion, deep insights, and the rare opportunity to experience aged Nebbiolo alongside its maker. We promise, this will be an unforgettable night.

We are delighted to welcome one of our all-time favorite Chianti Classico producers, Querceto di Castellina, to our community table for an evening of wine and conversation. A cornerstone of the Castellina subzone, Querceto di Castellina is renowned for its exceptional Sangiovese-based wines as well as its mastery of Bordeaux varieties—all crafted with a deep commitment to sustainability. These wines have long held a place on our list for good reason. For this special evening, we are honored to host second-generation owner Jacopo di Battista, who will share the history of his iconic estate while guiding us through a tasting of six outstanding wines. The lineup includes Sangiovese-based Chianti Classico, two vintages of the renowned Chianti Classico Gran Selezione “Sei,” the elegant Rosato, and two Merlot-driven wines—“Venti” and “Podalirio”—along with the Rhône-style white blend “Livia.” As Jacopo leads us through these remarkable wines, Chef Ty will present a thoughtfully curated, Tuscan-inspired five-course menu. Join us for an unforgettable evening celebrating the richness of Tuscan culture.

Was a great night for my girlfriend’s birthday. Only downside was how closely some two person tables are positioned next to each other.

We had the tasting menu and it was phenomenal! I almost didn’t order the trout tortellini because I don’t like trout. I decided to just go for it and it ended up being my favorite dish. That was a high bar because everything was superb. My wife loved the hand pies (i did too)

We’ve had the same waiter the past few times (young man bun) and he could use some improvement. We feel ignored for most the dinner and then when he does come and try making conversation it’s so uncomfortable. I love restaurant Olivia the food is fabulous but the service just puts a damper on a $250 dinner for two.
