From the creators of Sweet Basil in Vail Colorado comes a fresh, innovative new restaurant opening December 2012. Aptly named Mountain Standard, this rustic and relaxed tavern aims to set a new standard in the Vail valley by using an ancient form of cooking.

The majority of Mountain Standard’s menu will be prepared via the most primal cooking method: over an open and live wood fire. The only restaurant in the valley to devote themselves to this age-old way of cooking, the food at this exciting new restaurant will have rustic, bold and honest flavors, focusing on the purest ingredients in the Rocky Mountain region and beyond.

Service, like the cuisine, will have that perfect balance of providing a first class dining experience with a more casual vibe. There is no smoke and mirrors here - no fuss - just simple, honest, from the heart service and cooking. The beauty of the creek side location is mirrored by the high energy vibe of this dynamic restaurant.

Excellent food and wait staff. My only issue was that we arrived on time but our table was not ready. No problem. We attempted to have a drink at the bar however we were totally ignored. When some seats opened up we were told not to sit there. At that point I went to the check in desk and I spoke to Katie Ryan who got us our drinks and sat us down at our table. Thank you Katie!

MS our favorite Vail restaurant. But, last night was disappointing. Normally strong service was very spotty. Delays in getting food ordered, followed by relatively slow food arrival was capped by pressure to leave the restaurant (for the next group) before dessert was even offered. Food as usual was excellent.

Our waitress was from Spain. She served us with enthusiasm, excited about the dishes we selected and thrilled when we liked everything. My favorite tonic is Fever Tree and after a while the bottle of tonic appeared. It was my birthday and she selected the tiramisu, the perfect dessert. My only poor rating is the noise level. By turning down the music we could have heard each other instead of reading lips!

Google maps you to the back entrance. So we started off being guided in the back way by a staff member. Our waiter was great. The food was outstanding! We ate family style. Starters included the wedge salad (a very exciting wedge), lamb kofte (not too lamby), pimento cheese dip, salmon carpaccio, and tuna tataki. The tuna was the least favorite of the group. For entrees we enjoyed the crispy trout lettuce cups (great for a group and something you might find at an upscale Vietnamese restaurant) and the corned pork shank (totally unique and great flavor combinations). Dessert included the snickers bar (the weakest link in our meal) and the tiramisu (anything but boring and traditional—our group loved it). We also enjoyed a variety of cocktails off both the regular and dessert menus. Our friend had been obsessing about not getting into sweet basil once he realized it was Michelin rated but the food and experience at Mountain standard more than made up for it. Hard to imagine sweet basil is that much better.

One of my favorite places in Vail, I always eat here when in town. Excellent food, great service and I love the classy, but down to earth vibe.
