From the creators of Sweet Basil in Vail Colorado comes a fresh, innovative new restaurant opening December 2012. Aptly named Mountain Standard, this rustic and relaxed tavern aims to set a new standard in the Vail valley by using an ancient form of cooking.

The majority of Mountain Standard’s menu will be prepared via the most primal cooking method: over an open and live wood fire. The only restaurant in the valley to devote themselves to this age-old way of cooking, the food at this exciting new restaurant will have rustic, bold and honest flavors, focusing on the purest ingredients in the Rocky Mountain region and beyond.

Service, like the cuisine, will have that perfect balance of providing a first class dining experience with a more casual vibe. There is no smoke and mirrors here - no fuss - just simple, honest, from the heart service and cooking. The beauty of the creek side location is mirrored by the high energy vibe of this dynamic restaurant.

Always a good time. We were pleasantly surprised when they had some availability for dinner reservations on Christmas Eve

When we sat down, the hostess told us we had 7 minutes to choose what we wanted to eat and then the menu was no longer available. I asked the server questions and he couldn’t answer them. We’ve been here several times and it was quite a disappointing experince.

From the moment we entered, the service and dining experience was friendly and flawless. The hostesses were extraordinarily friendly and helpful. We opted for a short wait for window seating, and went to the very busy bar where we were immediately acknowledged by the bartender who passed us a menu and took our order shortly after. Our table became available before we had paid for our drinks and the bartender told us not to worry and would transfer the bill to our table. Our server Colin greeted us as we were seated, and informed us that he was “in training” but let us know that an “experienced” server would be backing him up. Colin needed no help. His “backup” was there to add details of spices, sauces and liquors add to food preparations of which he was very well informed and also extremely personable. As a party of four we ordered the Butternut Squash Baba Ganoush Appetizer with house-made pita. It was excellent. The Biscuits with ham were also perfection. Light, buttery and flaky. Our next course was fresh Maine oysters, Clam chowder, and Simple salads. All fresh and delicious. Our entrees were 2 “Holiday Specials” which were served family style. One was a Bone In Cowboy Steak served with spicy fried Broccolini and Twice Baked Potatoes. The second Entrees was a Fried Rainbow Trout served with Lettuce Leaves, Shishito Peppers, Rice and Beans and 2 sauces ( one sweet and tangy and the other a Buffalo Sauce). Both entrees were excellent, but the fried trout was so unusual and spectacular, that I would return just to have it again. Our desserts included the Strawberry Shortcake and Bourbon Bacon Apple Pie a la mode. Both excellent, but the strawberry shortcake was exceptionally good and different. The wine list is excellent. The overall atmosphere is casual, but there is nothing casual about the food, service or management of this excellent restaurant.

Food was pretty good. Service was not professional. Many young kids not really knowing how to serve people at these prices. Chairs uncomfortable, table small, pretty loud. Menus mostly of fish, pork and a few other things. Not much choice. Can’t figure what they specialize in. Expensive but you don’t feel you are in an expensive restaurant. Not going again.

Nice location and ambience. This is a BBQ joint with a limited menu. We were looking for a more refined, higher end restaurant.
