Chef Joseph Wrede is a Food & Wine Best New Chef, the winner of several AAA Four Diamond Awards, several DiRoNA Awards and has received both Wine Spectator and Wine Enthusiast distinctions. Joseph’s Culinary Pub is a creation of Chef Wrede and his creative and business partners. This is the third incarnation of Wrede’s original Joseph’s Table, conceived in Taos, New Mexico, not quite 20 years ago, for which he is well known and loved within the region and beyond. Joseph’s Culinary Pub is designed to be a platform for Chef Wrede’s unique and uncompromising vision on traditional and contemporary cuisine, both regional and international. Regarding the restaurant as a process much like theater, Wrede envisions the experience of dining in his restaurant as an interactive play between the pub and the public, with his sights aimed at rivaling high art.

    Looking forward to another visit. Everything was fantastic from staff to amuse bouche to the fried polenta, entrees of crispy chicken and duck breast and finishing with an impossibly airy Cloud Cake. The most minor of quibbles would be that I wish the skin on the duck breast was more crispy and better rendered.

    We enjoyed everything we tried- the duck fat polenta, the beef Christmas stew, the rabbit lasagna and lamb burger. All delicious, and the butterscotch pudding was the perfect ending. This place is romantic and cozy in the back room.

    We were three women catching up from our college days. We felt somewhat “rushed” during our dining experience. The waitress even asked us if she needed to “bag up” our bottle of Pellegrini water! The wine list is extensive. We found exactly what we liked with wine. It was restaurant week, so we opted for a starter, entree, and dessert. The duck-fat fries were a wonderful share with my friends. The lasagna was really delicious as well as the desserts (ice cream and lemon tart). The only drawback was being rushed. The waiter delivered our tab before we were even served dessert! What f we had wanted to order coffee drinks? Also, the gratuity had been ADDED on each of our tabs (we were splitting three ways). Our waiter did not even tell us that! So, was he expecting a double-tip from each of us? Felt transparency should have been better with being up-front that the tip was added. Maybe highlight it in the bill?

    We got lucky because it was restaurant week! Everything was perfect! Both the tamale and vegetable enchilada were melt in your mouth fantastic. My partner had the lamb burger and the rock shrimp appetizer - again, both were excellent. For dessert, we had the lemon tart and the butterscotch pudding. Everything was perfection including the service, ambience, and especially the food and wine. The only recommendation I have is that it was hard to read the menu in the lovely but dim lighting. Bring your reading glasses so you don’t annoy your neighbor trying to light up your menu. Can’t wait until next time.
