Em uses known ingredients, with deep roots, in unconventional ways. From the heat of kitchen, to the speed of service, huitlacoche becomes a small tart with Ocosingo cheese; cactus, in a broth made out of fish bones; escamoles, in small round croquettes with a dash of serrano. Our kitchen is the result of a long and dedicated process: is it the influence of different techniques, national and international, in the attempt of establishing a signature. The selection of the best product is merely the beginning of our creative process, is it a point of departure that leads us to unusual decisions, that end in dishes with soft yet intense flavours, shot and long-lasting, new and known. Em is not a type of kitchen, it is an inquiry of its own style that seeks excellence.

    Great food, but I recommend you to request a table inside the restaurant. We made the reservation and when we arrived they only have tables outside. And it’s not good if you are celebrating a special occasion.

    I was on my own so I could fully focus on the Omakase experience. It was extraordinary. Very high end cooking without leaving the Mexican ingredients and heritage. Although quite spicy priced (The Omakase menu is 2100 pesos, which is currently approx. USD $100) it’s worth every peso. It’s a continuous 2 hour fest of little plates arriving. (I counted >10). Meticulously prepared. Very Mexican and well balanced within the total Omakase menu.

    Food is amazing, creative and innovative. Plates are well presented and explained. The atmosphere is laid back. Its a nice dim lighted small space. The cocktails were very good. There is only one bathroom for Men and Women, which did not look very tidy or clean. Service is so so, nothing special. Our waiter was very forgetful. We asked for an extra glass, he forgot, we then asked for a paper napkin, he forgot too, asked a different waiter, didn´t bring it either. We then ordered and he brought an extra plate we had not ordered. We didn't make a fuss and ate the unordered plate (a salad which was very good). We would have also appreciated a wine menu, and not just have the waiter try to remember all what the restaurant had. Note aside: Unfortunately we found a piece of plastic inside a "croqueta de gusano" and told the waiter. This can happen in any restaurant in the world and we understand that. We didn't demand anything, just informed them. He just said he would "check it", but did not apologize or suggested anything to make it up, just left. We again did not make an argument about it, we were not in the mood to have a discussion, but just felt maybe the restaurant could have maybe done something. At least offer a complementary coffee. Go to EM for excellent food and drinks, but don't expect to be taken away with their service.

    Dada la asociación que existía de este local y Máximo Bistrot, hace que cualquier antiguo cliente piense que se trata de un relanzamiento con una submarca, lo cual es totalmente erróneo. El espacio es el mismo, pero la mejora es sustancial: mesas y sillería de mejor gusto y calidad y una iluminación muy agradable, y por supuesto un conjunto de creaciones culinarias con gran personalidad. Los platillos son de gran nivel de recordación por su mezcla de ingredientes autóctonos de primera calidad llevados a su máxima expresión, como por ejemplo sus croquetas de escamoles, o los sopes miniatura de huitlacoche cubiertos con queso de Oconsingo. Desde luego también hay otras creaciones más contemporáneas como un flatbread con erizo, o unos extraordinarios champiñones en espuma de papa. Los detalles se cuidan al máximo, por ello antes del postre se sirve un pre postre de hierbas aromáticas y cítricos que eliminan el gusto de los alimentos y así poder deleitarse con los sutiles sabores de la tarta de mamey. El servicio impecable.

    Súper Chic. Great date spot, prices are fair and the cuisine is interesting without being intimidating. Great quality ingredients, highly recommended.
