Eight Settlers Distillery & Restaurant is the culmination of a longtime dream to build a distillery and share the finest local foods with our community. Eight Settlers is a blend of the 1850’s traditional vintage western style with a modern twist of the second industrial revolution. The Chef’s inspiration for the menu is Modern American with traditional twists, while the spirits are distilled and blended to the highest standards with the best grains available.

    Since the last time we were there the brunch menu has gone downhill. The waffle was not as good as it had been and they've taken the croissant french toast off the menu. Ombiance was good, just wish the food was better for the prices. Also ordered a "hot" chocolate that wasn't even lukewarm.

    After 90 minutes we still didn’t have our entrees. I left feeling sad and hungry. Still spent $100 or so on drinks and appetizer. Went home and had cold pizza for Valentine’s Day. What a massive disappointment.

    The restaurant has a great ambiance. It’s different from the usual, with beautiful mountain views. My server was great, but overall, the service didn’t meet the expectations. The menu offers a good selection of alcoholic beverages. The downside was the wait—45 minutes for the food! That’s way too long for a single dish. Unfortunately, this turned what seemed like a promising experience into something disappointing.

    We had a reservation which implied they would be prepared to serve our party efficiently at the agreed upon time as per the reservation. I understand that Valentine’s Day is a busy day for restaurants everywhere but ultimately it is up to the establishment to limit their bookings to a number they are equipped to serve… Drink orders were promptly taken and that was the end of the prompt service. Appetizer took about 35 minutes which was astounding as we had ordered tortilla chips and dip (a seemingly easy order to fulfill.) Entrees arrived about 45 minutes after the appetizer. My wife and I had both ordered ribeye steaks but by the time they actually served them we were no longer hungry after sitting so long post-appetizer. We requested boxes to take our food to go after one bite each and while the boxes were delivered quickly, the check took another 15-20 minutes to appear. All in all a frustrating experience as I felt like Eight Settlers way overextended themselves with their bookings and then didn’t have a follow through plan. We’re not sure if we will return but if we do we will be sure to make it be on a quiet Monday when the parking is empty rather than overflowing. Also what’s up with the executive reserved spaces? You’ve got a tiny parking lot and your premier spots are reserved for your execs and completely empty. Yikes. 1/10

    Great food and great service. Typical for restaurants the wine is very overpriced as most of you probably know you pay as much for a glass of wine as the entire bottle would have cost you at the liquor store. Other than that it was very nice. Ambiance is good this was our first time in the lower level we usually prefer the 21 and over section upstairs. Pleasantly surprised that the noise level was not too bad and is probably even better if you’re able to get a table in the “jail cells “

    Service forgot our drinks and left us sitting for 20 minutes without checking on us or clearing our appetizer plates. Bus staff seemed so confused and brought the wrong food to multiple tables. Oh well, food was great.

    I had a hamburger with macaroni and cheese that was sold as a plate instead of a side. My lady had A salad with up grade to salmon. A hundred buck with tip. I asked the my waiter what he thought about the your hamburger. He responded with it taste like a hamburger. To top it all off. My hamburger was warm. Not even hot. Disappointed. That’s unusual for me to complain

    Service was slow. Could not get consistent and timely drinks. Waited an eternity for our food. Food not cooked to the ordered temp. Waiter was not very responsive to our needs. Had to ask for water service multiple times. He offered a slight apology for the tardiness of our food Frankly, there are plenty of other choices on the east side that will give you a better experience. Skip Eight Settlers!

    Bone marrow was fantastic, but the steaks weren’t too impressive. The pork shank is where to go. The whiskey is no good, but the cocktails weren’t bad.
