Nick of North [Chef Nick Chindamo, The Island Collective & Inn At Bay Fortune] is coming all the way from PEI to spend two days with us exploring the back forest, getting creative with the ingredients from the property and delivering a stellar collaborative menu with us May 9th and 10th. The afternoon will include an immersive foraging walk while Nick shares his love of wild food and storytelling with us. We will have a station in the woods set up for our first course and a botanical refreshment. Nick and our team will work throughout the week to collect and develop a creative menu showcasing the land and the season. After our time in the woods we will return to our back garden to warm up over the fires and continue the meal with a few hand held bites. We will then head inside for the remainder of the meal where we will offer a curated pairing and cocktail list. To read a bit more about Nick please continue reading after the event details. EVENT DETAILS -The event will start at 4:30 and wrap up around 8 -This will be rain or shine, please come prepared for all weather. - The day will start outdoors with walking/foraging and move to our indoor dining space. -The meal is $200 per person, which includes tax and the group sizes are limited. -Due to the collaborative nature of this menu we will not be able to accommodate any dietary requirements. -This event will require good mobility and proper footwear as we will be walking for about 40 mins on some uneven terrain. - Unfortunately no dogs will be permitted for this event Nick of North: Known to most as Nick of North - chef Nick Chindamo describes himself as a wild food enthusiast and storyteller. Chindamo is known for his philosophical approach to food and for sparking conversation about how we eat. Having spent 16 years cooking in well-known kitchens around the world, the 32 year-old is now a professional forager, educator and conservationist - who has chosen to dedicate his time to exploring the connections between food, art, science and culture. Whether he’s foraging for arrowgrass with culinary students, in the woods gathering undocumented species of mushroom to DNA sequence, or around the table at his intimate zero-waste dinner series, "an island collective" - his intentionality, curiosity, and respect for time and place drives his desire to catalyze the global understanding of Canadian cuisine.

The experience was memorable and the food was exceptional. The weather was not on our side and Downhome didn't miss a beat. Cold and wet and it didn't bother anyone a bit. Well done!

Fantastic Sap Boil gathering was a great way to start spring! The food was delicious and the backyard hanging out vibe was perfect for one of those first sunny afternoons in March. We would definitely recommend this chill culinary experience.
