We had a marvelous birthday dinner. Mostly bushed on the shared plates. The anchovies were especially delicious; everything was excellent!

The service was wonderful but the food was over priced and just okay. Nothing to get excited about. I am not sure why it is calling itself a Spanish restaurant. The only thing Spanish was the menu and the olives and anchovies in the limited tapas.

If you're a steak enthusiast ready for a culinary adventure, this is your spot! The restaurant offers an array of creative and exotic steak preparations, showcasing cuts and styles you won’t find elsewhere. The service is attentive, and the ambiance strikes a great balance between upscale and inviting. That said, there are a few areas where the experience could be improved. One notable quirk is the kitchen's policy of requiring you to order everything at once—appetizers, main courses, and sides. While this might work for some, it detracts from the fine dining experience by rushing the flow of the meal. Courses arrived back-to-back without much breathing room, which created a hurried feeling. A slower, more deliberate pacing would greatly enhance the overall dining experience. The family-style steak presentation was a surprising success. While it might seem unconventional, it allows for a fantastic variety of flavors and cuts to be shared among the table. However, if you're a fan of traditional standalone entrees, the menu may not cater to this preference as effectively. One note of caution for steak temperature purists: my medium rare arrived much closer to rare, with a cold, raw center. It’s certainly preferable to overcooked, but it’s worth mentioning to your server if you’re particular about doneness, as it’s difficult to adjust once the steak is sliced. Despite these critiques, the creative menu, high-quality steaks, and overall experience make this a worthwhile visit. I’ll definitely be back for another round—ready to share, savor, and enjoy.

I had very high hopes for this ultra-hyped fine dining spot, but it failed to deliver on many levels. If their prices weren't as high, the expectations would not be either. Staffing has been a problem in many Boulder places, but when steaks are sold by the ounce for Japanese Waygu and an American small steak is at least $50 sans sides, then they need to be more attentive to the whole package, including training their people so they know what they are serving, ie, info about the ranches and how the animals were raised. Aside from that, the quality of the meat was very very good. And whoever was on "grill" could actually cook. What was very very bad were the four vegetable side dishes. Broccolini was bitter, hard/tough while also being charred, cabbage, also charred was also undercooked (raw) and had a sweet sauce that was quite jarring, farm fresh salad greens were drenched in dressing and quite limp, and patatas bravas, a traditional Spanish potato dish usually with a side sauce was so covered in their overwhelming sauce that it looked like a meatball hero out of Little Italy in the 80's. Having had Basque cheesecake once before I looked forward to their cake, but it was either days old, or over-baked as it was too dry, and it is supposed to have a soft center, at least traditionally. Might this just be an off night? At these prices there should be no night this far off. I heard the restaurant group that runs this place has been expanding and perhaps their focus is elsewhere and it shows. As an aside, the removal of the white neon decorative overhead lighting would go far to create a nicer and warmer ambience as no one looks good in white light, but the setting and the food seems to reflect each other.

Everything was AMAZING the service, the food and the drinks. What was not amazing and was a bit insulting is community value fee that was added to our bill. The high pricing of the menu should have more than covered your insurance and 401K for your staff. So blatantly passing that on to the customer felt very wrong.
