Whether you're visiting from down the block here in Tribeca or from halfway around the world, Chambers aspires to be on top of your list of favorite neighborhood restaurants. We keep it down-to-earth. We're bound to start you off with something great to drink, alcoholic or not, and maybe some snacks while you look over the menu. We went to market this morning and we're going to make some delicious home cooked food and listen to some groovy music. And we've put together an excellent collection of soulful wines, spirits, and fermented beverages that we're excited to share with you. At the end of the day, we're having a few people over for dinner. We look forward to welcoming you in.

    On Tuesday, March 18th, we are extremely thrilled to welcome Roberto Santana & Alfonso Torrente, our dear friends from Envínate. Envínate needs no introduction anymore: the 4 friends, Roberto and Alfonso along with Laura Ramos and José Martínez, have been changing the Spanish wine landscape since they started this project in 2005. Be it in the Canary Islands or in Ribeira Sacra, their quest for terroir-driven wines expressed by old, indigenous vines, centuries of farmers’ wisdom combined with the power of the Atlantic, has revealed an ethos and an aesthetic praised today not just in their own country, but also all around the world. For this dinner, they dug into the library of our dear friend Jose Pastor to find treats and back-vintages telling their story, where they come from, and where they are going.     On Wednesday, March 26th of March, we are delighted to welcome Matthieu Delaporte to Chambers, one of the brightest talents of Sancerre. Delaporte may not be a name you are familiar with, but it is just a matter of time. Since 2010 the estate has been in the extremely capable hands of Matthieu, it is, without a doubt, one of the best producers of the region. Located in the very heart of the appellation, the hamlet of Chavignon, Domaine Delaporte owns plots in the most famous vineyards of the region: Les Monts Damnés et le Cul de Beaujeu. When Matthieu took over, his priority was making a careful evolution of the farming to become truly sustainable, and to be more hands-off in the cellar, including big work done on quality of pressing, spontaneous fermentations, lower amount of sulfur, increase of aging time, diversification of aging vessel, etc. The results are evidently visible today, both for the white and red cuvées, in the terroir definition, and the delicacy of details. We will be able to enjoy them during the dinner, especially because Matthieu is bringing some special releases from the estate library. If you love Sancerre, and the Loire, it is an evening you don’t want to miss! 4 Courses, 12 Wines.     On Thursday, March 27th, we are extremely thrilled to welcome a very dear friend, Matt Taylor, here at Chambers. Matt is one of the most talented viticulturist-vigneron of the US and he will present the different projects he is leading. The Matt Taylor Wines label focuses on sites from around where he was born & raised, and that he planted, grafted and farms on the extreme West Sonoma Coast of California. Cool climate, and tension driven wines of purity and place, Matt dry-farms his narrowly and densely planted sites organically, biodynamically and regeneratively and unabashedly has chosen a style that is counter to the majority of his California peers. He is building structural, 100% whole cluster Pinot Noirs, and making texturally and oxidatively driven acidic white wines with little to no sulfur. From his CVR vineyard we will taste his newest plantings and first bottlings from the property: the 2023 Sauvignon Blanc and 2023 Chenin Blanc, both from Loire budwood that Matt personally sourced and collected with Pascaline Lepeltier in the Loire Valley and has been propagating on the West Sonoma Coast for almost a decade to get it to this point. These are unreleased and unlabeled wines that Matt is pouring just while he is visiting us in New York. Ink Grade is a Howell Mountain project in Napa Valley that Matt makes and collaborates on with Master Sommelier Carlton McCoy. The oldest sub-AVA of Napa Valley, this particular site was planted by Joe Heitz of Heitz Cellar in 1990 and has been farmed organically since it was planted and is the largest certified biodynamic vineyard in the Napa Valley. These extremely steep, volcanic, rugged and terraced hillsides on Howell Mountain planted up to 2300 feet in elevation are yielding some of the purest and most elegant wines with tension reminiscent of liquid mentors such as Ridge Monte Bello, Mayacamas, Philip Togni and Dunn. Matt is without a doubt showing a forgotten expression of Napa and Sonoma, giving this extraordinary potential a new breath of life and energy, writing the present and future of the region. 4 courses, 13 wines.     Dining at Chambers is always a flawless experience, and this visit was no exception. This restaurant is a model of consistency, delivering excellence in every aspect, from food to service and ambiance. We sampled all the appetizers and enjoyed boudin blanc, cavatelli, chicken, and monkfish as mains (we were a group of six). Every dish was beautifully presented, incredibly flavorful, and generously portioned—almost too generous! Each bite was a testament to the kitchen's skill, making for an outstanding meal. On the wine side, Pascaline worked her magic once again, curating impeccable pairings. Special mention to Ullens in Champagne and Benoîte Ente in Chassagne, both of which elevated the evening even further. The service at Chambers is attentive, thoughtful, and personal. A special thanks to Jared and Pascaline, who always make guests feel welcome. Jared even called ahead to inform us that our table would be ready 15 minutes later than expected—a level of courtesy and professionalism that is unheard of in most restaurants. Truly impressive! One of the many reasons I love Chambers is the cozy, intimate setting, with just the right level of lighting and noise. Unlike many NYC spots, you don’t have to shout to have a conversation—the atmosphere is warm and inviting, perfect for an enjoyable evening. Chambers is, without a doubt, one of the best value-for-money restaurants in New York. The quality and quantity of the dishes, combined with a stellar and reasonably priced wine selection, make it an unbeatable choice. This was, once again, a perfect evening. If you’re looking for a must-visit dining experience in NYC, Chambers is the place to go. It remains my favorite restaurant in the city, and I cannot recommend it highly enough. ⭐ Rating: 10/10 – A true NYC gem! ⭐

    Another great evening. Hopped on the waitlist and then ate at the bar, with lovely hosts Brian and Naafeh. Oliviero, our genial and friendly somm, suggested a beautiful white from piedmont, which worked beautifully with our choices. Gentle pacing of food, and attentive service, are part and parcel of the chamber’s experience. The fantastic wine is a given. Highlights for us were the celeriac soup with brown butter caramelized pecans. Gulf prawns 🦐 also superb. As was hamachi. And an unforgettable dessert - burnt honey ice cream with MOF 2023 chartreuse. OMG. We love chartreuse and incorporating it in a dessert is genius.     Me and my wife have been many times. It’s our favorite restaurant in the city. The food and drinks are fantastic, the service is unmatched, the atmosphere is upscale but never stuffy, and the prices are very reasonable for the quality of experience received. Thanks again for an awesome meal! We’ll be back!
