On Tuesday, March 11th, we will experience an extraordinary night of wines. Jamie Wolff, founder of Chambers Street Wines, will be with us to present a vertical of one of the most legendary reds of Italy, Barbacarlo, made by the maverick Lino Maga who passed away in 2021. Surprisingly not as recognized as other icons of Piemonte or Tuscany, Barbacarlo, for those who know, ranks up there in the firmament of exceptional, highly individual expressions of terroir. Owned and farmed by the family since 1886, the small vineyard, located in the the tuff hills of Broni in Lombardia (technically in the Oltrepo Pavese region), is planted with croatia, uva rara and ughetta, with some of the vines more than hundred years old now. The winemaking could not be more hands-off: made the way the wines have always been, they are fermented in large, old cask, without temperature control, and bottled just as they were when their fermentation was finished, resulting in significant variations depending on the vintage (sometime with sugar, sometime frizzante). With their remarkable aging potential, being able to taste these wines will be an incredible experience, as there is nothing like them - really time, place and ethos encapsulated! 11 Wines, 4 Courses Here is the line-up: 2012 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 2005 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 2002 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1996 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1983 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1982 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1978 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1976 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1975 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1971 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso 1967 Lino Maga ‘Barbacarlo’, Provincia di Pavia Rosso

On Wednesday, March 12th, we are extremely happy to welcome our friends from Suarez Family Brewery for a very special dinner at Chambers, and our first beer-focused dinner! You may not be aware, but the Chambers team loves beer (on top of wine and Chartreuse), and Chef Jon and Pascaline are big craft beer aficionados, so when the Suarez team suggested this dinner, we couldn't say no as they are a favorite of ours! Nestled in Livingston, NY in the Hudson Valley, Suarez Family Brewery is a labor of love, a mom and pop brewery founded by Dan Suarez and Taylor Cocalis, one of the most respected breweries not only in New York but in the country. Their beers are beautiful and soulful, focusing on what they like, and what they care for, at their own pace and vision: delicate and crispy pils, uber-satisfying unfiltered lagers, country beers and ales mixed fermentation. The beers are delicious by themselves but also perfect with a great meal. So the is to focus on exploring the ingredients of beer, and how changing each one changes the flavor profile. For each course, we will present beers that are similar in most ways, but have a difference that makes them unique. To highlight this, Chef Jon will prepare a dedicated 4-course menu. We can't wait share with you all the craft and passion of Suarez Family Brewery! 12 beers, 4 courses Here is the line-up: Welcome: Domain Fruit #6 Country Beer 1st Course: Hops Palatine Pilsner Qualify Pilsner 2nd Course: Grain Cousin Country Beer with Sorghum Triangular Nature Country Beer with Buckwheat Local Boy Country Beer with all NY Ingredients (Barley) 3rd Course: Fruit / Yeast 2018 Merkel 'Montmorency' Country Beer with Cherries 2021 Merkel 'Montmorency' Country Beer with Cherries 2023 Merkel 'Montmorency' Country Beer with Cherries 4th Course: Dark Malts Poet's Walk Barleywine 2020 Lo and Behold Cherry Flemish Red Style Country Beer Estimation Altbier

On Tuesday, March 18th, we are extremely thrilled to welcome Roberto Santana & Alfonso Torrente, our dear friends from Envínate. Envínate needs no introduction anymore: the 4 friends, Roberto and Alfonso along with Laura Ramos and José Martínez, have been changing the Spanish wine landscape since they started this project in 2005. Be it in the Canary Islands or in Ribeira Sacra, their quest for terroir-driven wines expressed by old, indigenous vines, centuries of farmers’ wisdom combined with the power of the Atlantic, has revealed an ethos and an aesthetic praised today not just in their own country, but also all around the world. For this dinner, they dug into the library of our dear friend Jose Pastor to find treats and back-vintages telling their story, where they come from, and where they are going. It will be a very special night! 13 Wines, 4 Courses Here is the lineup: 2023 Palo Blanco 2023 Palo Blanco Las Molinas 2016 Palo Blanco 2020 La Santa 2018 Migan 2023 Taganan Parcela Margalagua 2021 Taganan Parcela Margalagua 2016 Taganan Parcela Margalagua 2021 Lousas Parcela Camino Novo 2016 Lousas Parcela Camino Novo 2021 Lousas Parcela Seoane 2019 Lousas Parcela Seoane 2018 Lousas Parcela Rosende

Dining at Chambers is always a flawless experience, and this visit was no exception. This restaurant is a model of consistency, delivering excellence in every aspect, from food to service and ambiance. We sampled all the appetizers and enjoyed boudin blanc, cavatelli, chicken, and monkfish as mains (we were a group of six). Every dish was beautifully presented, incredibly flavorful, and generously portioned—almost too generous! Each bite was a testament to the kitchen's skill, making for an outstanding meal. On the wine side, Pascaline worked her magic once again, curating impeccable pairings. Special mention to Ullens in Champagne and Benoîte Ente in Chassagne, both of which elevated the evening even further. The service at Chambers is attentive, thoughtful, and personal. A special thanks to Jared and Pascaline, who always make guests feel welcome. Jared even called ahead to inform us that our table would be ready 15 minutes later than expected—a level of courtesy and professionalism that is unheard of in most restaurants. Truly impressive! One of the many reasons I love Chambers is the cozy, intimate setting, with just the right level of lighting and noise. Unlike many NYC spots, you don’t have to shout to have a conversation—the atmosphere is warm and inviting, perfect for an enjoyable evening. Chambers is, without a doubt, one of the best value-for-money restaurants in New York. The quality and quantity of the dishes, combined with a stellar and reasonably priced wine selection, make it an unbeatable choice. This was, once again, a perfect evening. If you’re looking for a must-visit dining experience in NYC, Chambers is the place to go. It remains my favorite restaurant in the city, and I cannot recommend it highly enough. ⭐ Rating: 10/10 – A true NYC gem! ⭐

Another great evening. Hopped on the waitlist and then ate at the bar, with lovely hosts Brian and Naafeh. Oliviero, our genial and friendly somm, suggested a beautiful white from piedmont, which worked beautifully with our choices. Gentle pacing of food, and attentive service, are part and parcel of the chamber’s experience. The fantastic wine is a given. Highlights for us were the celeriac soup with brown butter caramelized pecans. Gulf prawns 🦐 also superb. As was hamachi. And an unforgettable dessert - burnt honey ice cream with MOF 2023 chartreuse. OMG. We love chartreuse and incorporating it in a dessert is genius. And we’re not really dessert people but we had to …

Me and my wife have been many times. It’s our favorite restaurant in the city. The food and drinks are fantastic, the service is unmatched, the atmosphere is upscale but never stuffy, and the prices are very reasonable for the quality of experience received. Thanks again for an awesome meal! We’ll be back!

This was a return visit for us. We drove from Boston specifically for a weekend of dining and couldn’t miss this wonderful place! Every dish perfect. Party of 3 actually shared four entrees. None less than perfect. All dazzling with flavor and beautifully chosen ingredients! I love this place. We are so tired of overly presumptuous places. This restaurant has a world best chef and feels like home with friends while dining at the community table!
