   My spouse and I have been living in MKE for nearly three years now and we rarely take the opportunity to dine out as the pandemic has altered so much of the restaurant landscape and reduced the number of quality locations with real talent for providing a unique experience. I am in any case, a well accomplished home cook and expand my repertoire regularly with new dishes. I am also not one that normally celebrates an occasion by dining out. While treating yourself to an evening of having others cook for and serve you is convenient, I find it easily taken for granted by most diners. My spouse craves new dining experiences, though our schedules rarely allow us to make plans far enough in advance to secure a table at a highly regarded location. I was fortunate in securing a reservation at Birch, a place we had spoken of several times over the last few years, for the occasion of her birthday. The restaurant is much larger than it appears from the street, the white tile of the kitchen and dark painted wood and concrete of the dining room make for a striking contrast. I was astonished to see a wide open kitchen, the staff working just a few feet from diners on the rail. A bold statement of confidence by the chef/owner. The menu is modest in size, as would be expected in this day and age since the raw costs of quality goods have risen so sharply over the past ten years, with a focused variety of offerings. Winter menus rely on a few hardy staples, and I was glad to see that Birch uses them creatively and interestingly. The staff was polite, courteous, and helpful. Our table was visited a few times to discreetly wish my spouse a Happy Birthday, which was appreciated since we have so few family members here in WI. I would readily visit Birch again for any reason or no reason at all. Supporting a locally owned and operated business that takes so much care in what they do is becoming more important than ever. I'm just sorry it took almost three years to get there.

   We had the most wonderful time! The food was stellar. The service was top notch. Honestly the best dining experience we’ve had in Milwaukee so far.

   Wow! EVERY TIME I dine at BIRCH, I am in awe of the quality of the food and perfect mixture of warmth & professionalism of the staff. We had the good fortune to enjoy the pop-up Cassis dinner last week and I am now so very excited for the opening of CASSIS at 333 N. Water this Fall. The food was FANTASTIC! Looking forward to have two phenomenal restaurants by Kyle and his team in MKE!

   Went for the pop-up event for Cassis, the croque monsieur was beautiful, the steak tare tare, and the sea bass was such a delight - I'm not a fish eater but I would definitely have more if it tasted like that! Outstanding

   We went for the Pop Up French Dinner for the new Cassis Restaurant. It was wonderful, from my Kir Royale to the last bite of my Sea Bass. I had the Beef Tartare and it was the best I have ever had, I would go back just for that. The Sea Bass was so flavorful, I could have licked the bowl. My three dining companions had the steak, which they said was very good, but didn't have much enthusiasm for the Bone Marrow that was served with it. We had two other appetizers the Vegetables with Aioli, most flavorful carrots ever and the salad with grapefruit's dressing was delicious. Looking forward to the new French restaurant that they will be opening in the fall of 2025.
