Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

    We celebrated my mom’s birthday. The food was incredible, and the ambiance was on point. Our server, Natalia, was very attentive with remarkable knowledge. Definitely made a memorable experience. Absolutely recommended.

    We returned more than a year later to experience the latest offerings and it did not disappoint! Jay was fantastic and made wonderful recommendations through every course. The whole experience can seem intimidating at first but BACÁN is very much approachable and is perfect for any occasion.

    Superb and surprising. The Latin American-themed menu is interesting and complex, from the unique "fois gras" appetizer to the mains. I stuck with a small plate, the hamachi, which I've had in many other restaurants but never garnished with as flavorful a topping. If my partner's truffle chicken was any indication the larger plates are right-sized and fascinating in their preparation, never spicy but always tender and prepared in a gourmet South American style seldom encountered in the U.S. Although poultry, the plate stood up well to a red Bordeaux. Wine list is balanced but reasonably priced with a larger than usual selection by the glass including Coravin wines. We shared a bananas Foster-style dessert that was prepared in a ring-shaped presentation with small bites interleaved by novel add-ons and was simply wonderful.

    This restaurant has been successful due to its incredible food, but more important. The personalities that are involved in the restaurant are wonderful. Jay, our waiter, engaged in conversation and made us feel like it was home.

    Very friendly service. Great settings. The food was delicious. Squash soup(not on the menu) has layers of flavor. Short ribs were cooked to perfection. I wish they cooked arepa a bit longer with less salt. The highlight was the .oqueca!

    This was a wonderful experience for our 6 year anniversary! From start to finish, everything was exquisite, including the food, the service, and the ambience! My husband and I took advantage of ordering several small plates to try as as much as possible, and then we finished it off with some amazing desserts! We traveled to Florida for our anniversary from West Virginia so we likely won’t have an opportunity to come back anytime soon, but it was amazing and if we are in the area again, we will definitely be back! To Bacán and our server, Brad: Thank you so much for a very special and memorable experience!

    The food and service were outstanding. The small plate apps were delicious. The dry aged pork chop was absolutely amazing. The service and ambience was as nice as we’ve ever experienced. We will definitely eat there again the next time we visit.
