Each course was preceded by a beautiful display of the fresh ingredients to be used in the next course. The food was fresh, inventive and delicious. The staff was incredibly attentive and gracious. The restaurant is very open as well so the noise level isn’t bad at all. The wine choices are great and pair very well with most dishes. The only small dislike I had is with on dish on the tasting menu which in no way was bad simply was a bit lack luster and underwhelming. Other than that tho the rest of the food is near perfect in terms of taste,freshness, and quality. The ingredients are hyper local with all of the vegetables coming from the nearby garden. He walked us gracefully through classic Omakase and then transitioned to incredible creative local variations featuring ingredients like chiles. The quail yakatori in mole colorado was sublime. The pairings were all excellent and featured obscure and exotic small production from Valle de Guadalupe.
