The small filet was prepared precisely at medium well as ordered and was a tender and flavorful cut. The red wine sauce and mushrooms provided great accents. The cedar plank salmon was a generous portion that had just enough of the effect of the wood roasting to add distinctiveness. The “new discovery” Sauvignon Blanc matched with the salmon in a brisk but not too tart way. Its 9 oz was a good value, too. Wandering Vine at The Castle meets that test. I am still thinking about the savory bone-in pork chop with demi-glace sauce, the decadent chestnut mushrooms, and the perfectly intense cocoa of the layered chocolate cake. I'm not going to lie, a part of me anticipates huge disappointment for every sad attempt of pork chops or chocolate cake from any other restaurant here after until I can return.
