Louisiana's third oldest city, Opelousas has big taste. Called the "Spice Capital of Louisiana," four national brands featuring spicy favorites are produced here. It's no wonder that Creole and Cajun food is on the menu and Zydeco music is on the stage. Stroll along the brick streets of Opelousas' historic district where you'll find Cajun classics like gumbo, crawfish étouffée and red beans and rice in the restaurants where nationally known chefs have honed their skills. Opelousas also specializes in quicker Cajun fare like po'boys and boudin, a sausage stuffed with rice and spices.
