And in addition to the American method of dry-aging that brings out the real taste of meat, we combined our unique method to decrease the melting point of beef tallow.     Excellent meal by Chef Dan. The course was the perfect size with excellent food choices. It is not super traditional if you are looking for that. It was more lively and relaxed. The room was tidy but lacked a high end ambience if that is what you are looking for. We were lucky enough to have another party book the Geisha experience with dinner. She danced, sang, and played games with us. Overall, a high point for us in Kyoto and an experience we will remember!

    The food choices were great, the service not so much. Although our server was polite he was untrained. The service failed to meet the value for the product. But the steak was excellent and my seasoned charred vegetables was too!

    Amazing experience with very talented and skilled chef. The food presentation was artistic and the taste and flavor was equally unique. The chef and his assistant were very kind and attentive and used translation app to communicate with us. We found the entire experience to be one we would not have wanted to miss.
