Located in the heart of the old railroad and mining town of Minturn, the Saloon’s building dates back to 1901. During the last one hundred years it has been, at one time or another, home to various taverns, restaurants and even back room gambling for railroaders. While the last five decades have seen the development of Vail and Beaver Creek resorts just seven miles on either side of Minturn, the town’s appearance and feel retains its historic Colorado roots. Recently under new ownership, The Saloon has undergone a complete renovation and reopened in November of '23 with a fresh new menu and updated space. Chef Anthony Mazza's menu features slow-cooked short rib and pork cheek and Colorado River Ranch wagyu steak. The nostalgia and historical memorabilia and photos remain. The space still feels like The Saloon, but carried into the present day. Enjoy a resurrected Colorado Saloon and feel the history all around you.

    From the moment we stepped in, we were greeted by Mary who was awesome. Friendly big smile excellent way to start the evening. We’re immediately introduced to our server Russell, who is also amazing. Gave a suggestion on what we should eat, and made sure that we had a margarita, moments after we sat down. The margaritas were really good. I had posole which was really well done, I’m a little bit of a posole snob, but they nailed it. My dinner guest had the Birra taco  which was also good. Not enough meat inside, and too much cream on the outside, but the Jus that came with the taco was delicious! All in all, it was a really wonderful evening. I can’t say enough about the service, or the ambience, on point in both aspects. Whatever they are doing, they are doing it well! Most defiantly a must do stop if you are visiting the area.

    First time eating here. We have tried many Mexican establishments in the valley and Del Toro was first rate and we felt it to be a good bargain. The chef recommended meal for two was fantastic and very tasty. We are Celiac and they were knowlegable made sure we did not order anything with flour. Margaritia was great. We will be back
