In 1998, Buddy Guindon, his wife Katie, and his brother Kenny opened Katie's Seafood Market in Galveston, Texas. For more than 20 years now, Katie's Seafood Market has provided the highest quality of products available to its customers. The majority of seafood comes from local fishermen and shrimpers, including Red Snapper, Grouper, Golden Tile Fish, Flounder, Oysters, Shrimp, and Blue Crabs. A producer contacted Guindon in the hopes of doing a reality show about his family business. In 2015, the reality show 'Big Fish Texas' came to life on National Geographic. As a supporter of the local economy, In September of 2019, Buddy opened Katie’s Seafood House, next to the market. Katie’s seafood market supplies the restaurant with all fresh seafood. We take pride in being the only local seafood restaurant on the island that brings fresh fish straight from the boat and to your table.

    Rudy & Paco’s is our special occasion “go to” Galveston restaurant. Yet this trip exceeded even our usual high expectations. Great food, quality service led by our Server, Jose’, quiet tasteful ambience. We were initially slightly disappointed that Paco was taking a well deserved day off, but the Maitre d’ filled in ably. It was truly a special occasion, my 80th birthday.

    After waiting around 15mins for our drinks to arrive and not getting the drink order correct our visit didn’t start well. But an intervention from the manager, Kyle, changed our experience and we really enjoyed the rest of our night. The food was outstanding and the service was eventually excellent. Would definitely go back again.

    This is one of my favorite restaurants in Galveston! When I really want a great Italian meal, I head there. It’s a bit tricky to find but definitely worth the challenge. It’s a “must try”! We had the calamari, meat lasagna, eggplant parmigiana and panna cotta. All wonderful!

    One of the best in the state. Food, service, ambience all excellent. Even though we travelled from Kerrville to Lake Jackson to see friends, we made the additional drive to Galveston with our daughter for the chance to eat at Vargas.

    Fantastic night! Soup was awesome! They make their own sausage for reference. Baby Bella’s was amazing! Gnocchi is always a winner and the bread was delightful! From our servers Eric and Chance to our bartender Reuben. It was a perfect evening with friends and great food! Love this place
