The website does recommend that parties of 1-4 people plan on 90 minutes (max) at their table and any parties five plus, plan on two hours max. Have never seen that before but assume because they are usually busy. The food was delicious. The spinach was a little salty, but the sweet potatoes and truffle mac & cheese with chicken was phenomenal. Good size portion for the cost. The occasion for this meal was to celebrate a birthday and an anniversary. There was a long-stemmed rose placed at the table to greet us, and a card personally signed by a dozen staff to mark the occasion. Cowboy Star steaks deserve special mention. I had the 18 ounce bone-in ribeye, dry-aged for 35 days. The sear was perfection - crisp and perfectly seasoned with a dash of salt. The interior was exactly as ordered - medium rare - and flavorful beyond belief. 35 days of aging enhanced its beefy umami with no off flavors. Another in our party had bison short ribs that were a cowboy's dream. The third in our party had the 8 oz filet mignon. He said it was beyond tender, and the sear and flavor made a mockery of steaks he'd eaten in other places in the past. Spoiled him, in short. The staff were thoughtful and personable, and stayed on top of our every need, without "hovering". A specific and special shout-out to Jason, our server and the the wine sommelier. Hugs to our runner and the gal who monitored our glasses and cleared the table service between settings! I almost forgot the cocktails - "The Last Word" - were made exactly correctly - gin, Chartreuse and clear (not red) Maraschino liqueur. Desserts were clearly in-house creations, the equal of our entrees. What a meal! What a restaurant!
