Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar.     Cholon is always phenomenal. Great food, very chill atmosphere, wonderful service. A highly recommended spot for delicious, creative and satisfying food. Everything is thoughtfully prepared. The dishes are well balanced, interesting and meticulously presented.

    I enjoyed The Bees Knees, Gin, honey syrup and lemon juice. Would recommend The deviled eggs for an appetizer were yummy. Shared a ceasar salad with the husband...a bit too lemony.. We then had the lollipop lamb chops , with creamed spinach, and the PEI mussels as an entree. Lamb chops were tasty, had more garlic than we cared for. Would have been better off ordering them as an appetizer. We didn't need that much food. Great service, its a beautiful restaurant. Next time we'll sit at the bar, which was packed when we arrived. I wasn't happy with our small table, and would have much rather of sat in the main dining area. I asked if we could switch our table, but we didn't seem to have a choice.
