Izakaya Den is Denver’s popular Japanese gastropub, modeled after the lively after hours establishments found throughout Japan. I always wondered about how restaurants figure out pricing for dinner items with white truffles.... We ordered a risotto with white truffles and the waitor came and grated the truffles. We thanked him. A few minutes later, he returned to add a bit more grated truffles....He obviously weighed it before, returned to the kitchen and weighed it again, and when he shorted us a tiny bit, he actually returned to give us our full amount of this treat...All done quietly but I now know how it should be done. Unsosphisitcated guy that I am, I once ordered white truffles at another Michelin star restaurant and the waitor kept asking me if I wanted more. I kept saying sure. When the bill came, I got an additional $105 for the "extra truffles". I prefer the Tavernetta method.
