I am so glad I listened! I ordered the Carbonara, the Bucatini was perfectly cooked and the Guanciale was a great addition to balance out the entire dish (ok I’m getting hungry again), my friend had a spaghetti with red sauce she said had the perfect amount of sauce the was so flavorful. We enjoyed a bottle of Amarone and great conversations with the bartender JP and GM Steph. We quite like this approach but while it gives many choices, it is also a bit limiting for the table because everyone is required to select the same course. Granted, there are numerous choices and add-ins but I'm sure it helps simplify things for the kitchen. We thoroughly enjoyed our meal and experience with Anhelo. The petite course is definitely a lot of food when you consider the bread serving and the formage we added to our dining experience. I wouldn't skip the wine pairing either - they have a tremendous cellar and they paired well with each course. The staff is amazingly coordinated and synchronized throughout the night.
