The roast beef was superb - possibly the best roast beef we have ever had - tender, succulent and perfectly cooked. Sometimes when I say this to someone they look at me like: that is a very bold sweeping statement Henry is it not? It might sound that way but it actually isn't. The main supposed competitors are not up there - The Crown, The Royal, The Cove, Farmyard (as I am sure the respective chefs would concur). All of those are ok but Bayte is basically a proper London quality restaurant. If it was in Wandsworth or Islington or Shoreditch it would be fully booked every single night without doubt. The middle-classes in London kill to dine at a superb and unassuming restaurant like this. Now, this being Hastings that is not exactly true but only because customers are not really used to superb food. I am no Jay Rayner when it comes to actually describing the dishes but there is always with every plate a sense of simplicity and quality that pervades all. Speaking of The Guardian, this really is a Nigel Slater-inspired restaurant in many ways. Chefs Jacob and Josh could easily be working in top London restaurants but they have chosen to do a great local restaurant down here in Hastings instead - and we are blessed for that. Josh is also one of Bayte's produce suppliers from his farm out towards Rye. If you have not dined at Bayte yet then I would urge you to get involved and join in the good food revolution ..
