And while the dishes all honored traditional Thanksgiving preparations, they also each featured the Mago chefs’ innovative and original twists, making for a truly memorable meal. With plenty of leftovers! 1: The turkey was prepared two different ways, dividing the white breast meat (brined and roasted) from the dark meat (cured and slow-cooked leg thigh and wing). Both preparations were moist, tender and flavorful. 2: The gravy was as it should be: silky smooth and rich with giblet flavor, but built to compliment the amazing turkey and whipped taters, not overpower them. 3: Including kumquats in the cranberry sauce gave it that extra fruity-tart oomph that set it apart from even the best handmade cranberry sauces. 4: The use of pear in the roasted fall veggies raised my eyebrows in skepticism at first, and then delight at the flavor combination. Sunchokes are also not something we are used to eating, and they were part mushroomy and part artichokey….yum! 5: Adding Maitakes to the cornbread gave it a very subtle savory note, counterbalanced nicely with the holiday-spiced, honey-sweetened butter. 6. The Chicory Salad was SUPER fresh, and I didn't think the addition of celery into the mix with persimmon would work, but sure enough, along with the cilantro-joghurt dressing, everything came together in perfect balance of crunch, sweet and creamy 7. Finally, the 9” round of Guava Cheesecake can only be described as a super decadent tropical fruit flavor bomb!
