Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar.     Hidden gem! The owners are young, fresh and innovative. They hire the best people (ask Jeff any question about whiskey!), they've cultivated amazing dishes (black truffle pasta is to die for!), and they created an atmosphere unmatched here in Boulder! Jason personally delivered some of our dishes and stayed to chat, answer questions, and share his vision; while his wife sat across from us having a wonderful time with her guests! So impressed!!!!!!

    A culinary adventure and exciting mystery at Flagstaff House! They helped make the birthday celebration very memorable for us and included a lovely personalized note and birthday wishes. The food was incredible and paired exceptionally well with the wine. There was even a crafty “blind wine tasting” that was thrilling to try to guess the wine. The four stars out of five was simply because there were a few items that we generally don’t eat on a regular basis that couldn’t be modified out of the chef’s tasting menu. However, It’s good to try new things and we loved the overall experience.

    We decided to sit in the dining room for happy hour because the bar was too loud. I ordered the fish tacos and they were served with grilled sweet peppers, sides of black beans, chopped tomatoes, guacamole and a dab of sour cream. The soft tacos were separate on the plate and I made my own tacos. They were the best fish tacos I’ve ever eaten. My friend ordered the salmon off the regular menu and she raved. Gary our server was beyond - we had wonderful service. Oh, and don’t forget to order a lemon drop - yummm.
