Because this is a new restaurant, I had to make a reservation a month in advance and it seems like that is still the case today. They may take walk-in reservations though. The food was extremely good. I ended up getting the sea bass, brussel sprouts, dark chocolate gelato and the mac and cheese (which could be baked a lil longer to make it better). It is not that loud in the restaurant especially since there is a live band performing too. We sat out in the patio section. It was really nice. And to our surprise, because we went early we got to take advantage of happy hour too. So win-win. Service was very friendly and efficient. We ordered the cauliflower, the pear pizza, pork belly, burrata, and the salatim. Everyone was happy, even me being vegan. So warm , attentive , intentional and present ! We truly felt like guests in someone's home . The food matched the rest of the sweet vibe at Openaire . It’s expensive but worth every penny, especially as the restaurant is pretty generous with the portions. The Pane with pistachios and ricotta is amazing along with the the broccolini caesar salad. The uni pasta is simple and elegant, and one of the best i’ve had, especially topped with grade A uni. Don’t skip dessert and take any digestifif offered. $350 for 2 people. There are so many "fancy" restaurants in Los Angeles where the food is disappointing, but this was not one of them. Having known about Republique for many years and seeing it on many "best" lists I was prepared to be disappointed, but it met my expectations. My parents and I were very pleased with our meal, the service, and the ambience which is beautiful.
