A good contrast between textures and flavors. E.g., crunchy pine nuts against tender raw tuna; sour enoki against vermouth sauce. Our server daniel made amazing recommendations from the sourdough bread with the chicken liver mousse and heirloom carrots were outstanding. For our mains we shared the seafood rice, the duck confit which were all melt in your mouth. And for dessert, we had the flakiest apple tarte tatin.
