Ah'pizz is a pizza restaurant offering authentic Neapolitan pizza. Many people know a Neapolitan-style pizza when they see one, but don't know what gives its distinctive look and taste. Ah'pizz is more than happy to educate its guests, ensuring diners know exactly why this pizza tastes so good. First, Ah'pizz' red sauce is made with San Marzano tomatoes that have been harvested from the volcanic plains surrounding Mt. Vesuvius. At Bivio our passion is authentic Neapolitan pizza. Napoli... our love of the city, its cuisine, and in particular, its pizza is where our story began. We heard time and time again “It’s all about the dough.” True to Neapolitan tradition, and the passion of the pizzaioli, we construct our pizza using “00” flour from Naples, San Marzano DOP tomatoes, extra virgin olive oil, fresh basil, fior di latte or bufala mozzarella, and sea salt. Our dough is gently mixed using a 28 year old “lieveto madre” (natural yeast culture) then with intense heat is baked in our wood burning il forno. The food was excellent, just 2 minor things: 1-they don't serve alcohol here. I have since learned this has something to do with Montclair in general, though this restaurant does allow you to bring your own wine. I don't hold it against them, they have no control over it and now i know for next time. 2-They had a modified menu for Valentines weekend, so the regular menu wasn't available. Not the end of the world at all, and we got our food EXTREMELY quickly (and it was delicious), just another thing i wish i had known ahead of time.

The service was absolutely perfect. We were given enough time to have our wine and look at the menu and discuss our options. The timing of the appetizer to the main to the dessert was seamless. We really enjoy not having to feel rushed through our meals and actually have a moment to enjoy every bit of our mezze options before the entree. 10/10 will be back and recommending to others!
