When you arrive at the gate that said Once Pueblos, you are at a T-intersection. Left is the big road, obvious, but if you saw it from the approach, you know it's over on the right on the hill (the treacherous road). We went left but it seemed to lead nowhere, so we turned around and went right (OMG, if you're not in a humvee, you're screwed). Two or three sign would have saved us a lot of effort! That said, this place is special, stunning, a destination worth the drive across the border on it's own. The service is so professional, polished, knowledgeable, and on point-- there is nothing north of the border that comes close. We had just dined at the lovely Finca Altazano (which is justifiably beloved in the Valle), and Once is on another level. This is Micheline food. It's inventive, it's careful, it's intentional, and it is food as art in every way. But... Go soon. Because it was also empty when we were there. And I fear that they cannot survive without patronage. I hope we were there on an off (Friday) night, but if I were you, I'd go get this experience while it's available. The room is gorgeous, minimalist but with tasteful art, and huge walls of glass overlooking the Valle (perfect for the cold evenings). This is elevated cuisine where they got everything right.
