Ambiance was superb - welcoming feeling, tables nicely spaced, noise level tuned to just right, lighting excellent. Menu was nicely limited with an excellent range of foods for every course. Wine list almost intimidating, but there were good choices at all price levels. We enjoyed a nice Super Tuscan. Our waiter, Jesse, was not only pleasant, attentive and knowledgeable - he also made sure to take excellent care of me and my many food sensitivities. Not for a second did I feel I was being a pain. Server (Karli) was outstanding. Her depth of knowledge about menu items including cocktails was impressive. She was attentive without being intrusive and paced the meal perfectly. Despite every table in the room being occupied, the noise level was negligible. Their version of apple pie, which looks like a large red delicious apple (complete with edible chocolate stem), was an amazing preparation. - DDebraDenver / Colorado •1 review5.0Dined 5 days agoDining at the Populus Hotel was a unique experience from the mushroom “leather” sheets hanging above the bar to the ambience forest sounds playing in the elevator. the food was incredibly delicious and the personnel were very friendly but authentic in their manner of serving. I was fascinated watching the actual hotel guests walk in and out. It was a hotel filled with interesting people. We had appetizers and drinks below at Pasque and then went to the other restaurant, Stellar Jay on the roof and continued our dinner. The food in both places was excellent, the wood smoked quality that many restaurants boast about in Denver was better actualizad at these two restaurants and gave the restaurants a welcoming sweet Smokey smell.
