The char, smoke and service are core to the scheme... and this scheme is working. Our table, served family style, ordered an initial bread service, each listed vegetable, except for sunchokes, and three entrees: sable, sausage, and gnocchi. Best dish: the sable served over chard had a perfect char and sauce. Runner ups: the cabbage and also the butternut squash. The latter has a spicy kick. Regret: Not ordering the sunchokes. Oh well, there's a next time. Pro tip: Order a bread service to sop up the delightful sauces. We ordered a second service to do just that... and inspired a trend with the table next.
